To finish off the evening, the dinner feature was panko crusted shrimp. I normally use bread crumbs, but I couldn't resist it when I saw the box of panko flakes at the store. Their delicious light flavour and extra surface area makes all breaded things extra spectacular!
I wish I used colossal shrimp, but they're a bit out of a grad student's budget. I had moderate sized shrimp in my fridge and was really craving some breaded butterfly shrimp, and delicious it was.
Baked in the oven at 425F for about 10-12 minutes, they were just perfect. The tails were singed and absolute golden perfection.
Placed overtop a simple shredded lettuce salad that I embellished with some carrot ribbons. Yum!
